The ingredients of the centeno bread are: integral flour and rye flour, yeast, salt, caraway and water. Buttermilk bread: integral flour, yeast, buttermilk and salt. Very tasty ;-)

Speaking of German stuff - i always see that place in Puerto Juarez before the ferry terminal - Michel Salchiera de Aleman or somthing along those lines. Anyway does anyone know anything about that place - who they sell to, wholesale, retail etc? I would stop in but they are always closed by the time i get up around that area. By the way if anyone can get their hands on Danish back bacon or give me a detailed recipe as how to make this heavenly substance then please let me know...
As I understand it Michel was a German who settled here and had a fairly popular German restaurant. After his death his Mexican widow and daughter ran the place for awhile, but eventually closed it and concentrated on the wholesale meat business. They supply many of the hotels and restaurants in Cancun. Prior to Wilma their over-the-counter products were first rate. We began to notice a decline in quality after Wilma, maybe caused by "stretching" the products in an attempt to recover the terrible losses they incurred. They gave away tons of meat before the storm hit, and lost the rest in the storm and the electrical problems afterward. Then, with the opening of the gourmet shop in Plaza Caracol, for us, at least, there was no longer an incentive to drive all the way up to Puerto Juarez when we could get equal or better quality closer to home. Back then, for certain unobtainables like bratwurst or rare roast beef, they were the only source. Sra. Michel and her daughter are charming people, and certainly if you're near the store, it would probably be interesting to give them a try.

First Review We placed our order Thursday and picked it up today. We met Carmen Fellmann, who is a delightful person. Without delineating the entire order, everything is/was (I say was because we've already finished a good part of it) first-rate in quality and preparation, and absolutely delicious. The marzipan balls, rolled in cocoa the way my mother used to do it, were perfect, as was the stollen. The Cervelat salami was sliced perfectly, fresh and peppery and the rye bread is real rye bread. Tomorrow we crank up the coals and do some bratwurst, two styles, rough and smooth. Based on today's taste experience, I can't wait.
Stollen and and my favorite pfeffernüese!!! My grandfather prepared those cookies at Christmas every year. I'm there! Don't see the address. Where do you pick up?
