This is just a guess, but maybe because of the same reason you never see a place serve both Coke and Pepsi. They probably have a contract with Dos XX.
Someone posted here once that Dos Equis had the hotel zone sown up but I'm not sure if that's true or not. The all-inclusive down Playa Del Carmen way all seem to serve Corona so maybe.

Some bars in Baltimore don't carry miller lite anymore because bud light payed them not to. It's actually not lawful in the states but it could be the case in cancun
Same thing happens here in Calgary. Some bars just have a preferential set up with one brewery or another.
its all about the liquor reps... who ever is making the better deal will get the business in the long run. DOS XX must be more readily available and cheaper then the main competition. And i'm not sure about where everyone else lives... but where i live Corona isn't availible on tap. No chance someone is gonna server corona bottles over cheap kegs.
I took this last year to Temptation and TSA didn't give me any problems. All filled with Apple Pie Moonshine.
