I am cooking pumpkin pies and corn souffle for Christmas dinner with my daughter and a few others. Will be back tomorrow afternoon. Cannot wait to try a Mexican Applebee's. I hope everyone enjoys their Christmas and survived last night.
Merry Christmas everyone! We've survived so far. I made two lime cheesecakes which came out perfectly. And we had bacalao (dried cod), which I absolutely cannot stand (wretch, gag, blech), but which my husbands insists is the only food that matters at a Mexican Christmas. My daughter insisted that we make chilaquiles, which are not at all a Christmas food, but they saved the meal for me!
