    Oops, forgot...

    Breakfast today was a Curves protein shake made with 2% ,ilka nd frozen bananas instead of ice and a light yougurt.

    Lunch (big meal at lunch actually) is going to pork roast with asparagus and brussel sprouts at Mom's. Gotta get a few carbs in there too but not sure what yet.

    What time do we eat Karan?? I love pork roast, can do without the asparagus though!!

    Will you have sauerkraut with your pork roast ?
    That's the way I like it, and sauerkraut is low in calories and fat.

    We didn't.

    But I did bring home some left over pork roast to have with sauerkraut one night this week.

    Tonight I think I'm having a tomato, cubanelle pepper and onion salad (with olive oil and balsalmic vinigear dressing) and a cup of Mexican potato soup I'll be making later.

    This is NOT my recipe but I have been making it for some time. I found it in a cookbook and saw it again today in the USA Weekend magazine of the Sudnay paper:

    MEXICAN POTATO SOUP

    1 large baking potato peeled and cubed

    2 cups fat free half and half

    1 cup corn (drained)

    1/2 cup small red bell pepper finely chopped

    2 tsps minced jalepeno with seeds and veins removed

    1/2 cup water

    1 1/2 tsps ground cumin

    1/2 tsp chili powder (I sue Mexican chili powder)

    salt and frshly ground pepper to taste

    Tabasco to taste

    1 cup fresh cilantro chopped


    In a medium saucepan combine all ingredients except the cilantro. Simmer, covered, until the potatoes are done. This will be about 15-20 minutes.

    Add cilantro and serve

    Makes 4 1 cup servings.

    For those who care...

    195 calories, 8 g protein, 38 g carbs, 1 g fat (0 saturated), 20 mg cholesterol, 4 g fiber, 242 mg sodium

    I keep meaning to ask, what is sauerkraut?

    (Karan, the salad was so nice and practically fat-free, hurrah!)
