There was a Coney Island hot dog joint in the sleazy part of Ft. Wayne years ago and my mother said they made the chili sauce out of the floor sweepings and forbad us to go there. It is where my father always took me after the Komet hockey games! Best dogs in town!
There are two cooking schools here in Cancun. I think that one or both of them might be able to supply advanced year students to work as chefs for tourists. I'm getting the contact info from my friend who knows everyone who's anyone and will let you know what I find out.
