I've done Selvatica for their whole-day package and it was great (ziplines, ATV's and cnotes) and I hear Xplor is also good. I've done the parasailing thru the tour tent at the resort, and while not a day-trip was awesome. Also for a night out if you can peel yourself away from the TTR night life, I strongly recommend the new permanent Cirque show in Cancun...it's a bit spendy but worth every penny. Go for the whole dinner theater option. I've been twice and feel it's worth every penny.
