Staff doesn't care what type of money you use. Us dollars are accepted everywhere they see you are a tourist and give you the price in dollars unless you ask for it in pesos in most cases. Cancun is devoted to tourist and for the most part cater to what we need many speak english and are more than willing to help. You show them the respect they deserve and they will the same to you.
I still have pesos left over from 6 or 8 trips ago. Everywhere I've been takes American dollars. The only place I use pesos is the bus, but I've even used $1 bills there (sometimes get change back, sometimes don't). I make sure I get lots of small bills before I leave...getting change is a pain and it's usually in pesos. If you need pesos, you can always use an ATM. If your bank doesn't add a lot of fees, it's usually cheaper than changing money at a bank or the airport.
Is there anywhere that won't accept Pesos? I'm from Canada and do not want to have to get USD if I don't have too. Does TTR take pesos or USD only to go out to the clubs at night?
I screwed up one time and brought rolls of .50 coins. I was getting strange looks from the workers when I would give them out. I found out US coins are no good in Mexico.
It's Mexico everywhere takes Pesos! If you have left over when you get home just exchange back at the bank or the airport. No muss no fuss!
