From what I know, all the AI hotels have day passes. Some cover one to three time frames, cover food, drink and nightly entertainment... If it falls within your time allowed. Prices I have seen range from $70 to $110.
If you have kids, the Sea Adventure is a great place to go for the day. It has a water park and the day pass inlcudes meals. Last time I went, it was $30 per adult for the day pass but, that was in September.
Hotel day passes are pricey, but most of them have them. You might also check out the beach club behind "The City", called "Playa Cabana". It's not all inclusive but it might run cheaper than a day pass in the end. As mentioned, Sea Adventure offers the day pass, but I believe it's just for the water park area. Not bad if you've got kids, a little loud if you are not into the rug rats (I have one of my own, not complaining!). Wet n Wild is all inclusive too, special price for Cancunenses with ID (last time I went I believe it was 350 pesos but my brain may be wrong).
