We met a vegan there last trip. He was very limited on food choices. But at least they were only in for 3 nights and he made the best of it.

As Donald mentioned...chat up the waiter. I eat little to no meat most trips, but have never been disappointed..depends on your level of strictness too...pure vegans will struggle more. Buffet has lots of options. The grill cook has tortillas and grilled veggies for fajitas. Italian can get most of the dishes veg....the mushroom risotto is excellent...but is made with stock. Asian place fewer options. Marguerites...chips and guac I could eat 3 meals a day...but the tacos with no meat are excellent. Be creative....ask for help. The staff will literally bend over backwards to get you what you want.

All the menus have 'vegetable lovers' section. Or, just ask for the meal without the meat. They were very accommodating to my requests for 'no bun or no tortillas'. But I'm not vegetarian so can't vouch for any of the selections.
