They usually have them when there is a big event on, such as a singer or the state fair. But I think in Cancun it would be hard to find one, maybe in the towns around Cancun like Leona Vicario (bad spelling I think) or areas like Bonfil. The taxi drivers might know. If you do find one, be prepared its pretty hardcore and it might be a bit dangerous for a tourist. You bet with the people around you, no odds as such, you just choose the one you want to win. I think you'll struggle to find one in Cancun - the tourists don't like it. Good luck
