For dinner, alittle confusion, but do men have to wear button down collared shirts with long sleeves? I can see collared shirts with short sleeves but long sleeves?
No, button down collared shirts long or short sleeve are not required. T-shirts, not tank tops, are acceptable. But make the T-shirts nice dammit or my whole vacation might be ruined as I may be triggered!

Basically for men...no tank tops. No shorts. No sandals. Women can pretty much wear anything they want.
This is what it says on their website-- Gentlemen: Long pants, collared shirt with sleeves and closed shoes are required. Does that mean long sleeves?
I think the sleeves just mean no tank tops... I wore a golf shirt most nights and never had an issue. Long pants seems to be the big thing.
You don’t need long sleeves, they just don’t allow tank tops. They will also send you away for wearing shorts or sandals.
