Question for those of you who've been there before- do people (women) dress up for dinner, and then go back to their rooms and change into theme night outfits? Or do some people wear theme night stuff to dinner, or what exactly is the deal with that? I'm trying to figure out how many regular outfits I need to bring. You may be right lol... my thought was "I have to start somewhere!"

Yes, the women usually get dressed up for dinner and change into theme night attire afterwards. The exception would be a sexy white dress for white night that would be appropriate at either.
