So we will be there 2-25 through 3-2 for a long weekend. Basically both of us are strictly Miller Lite drinkers. Is it common for people to stop by Wally World to pick up their favorite beverage before arriving to ensure they can drink what they want the entire stay? If so can you bring coolers to the pool or how do you handle it?

I'd say...you could probably do all that you suggested. Jamie and I are also mostly full-time Miller Lite drinkers too...but there's no way I'd go through all that hassle at an all-inclusive resort. Dos Equis is a good beer...and also a fairly light lager, like Miller Lite is. If dark beer was the only option...that would be a problem for us...but after the first one or two...it just tastes like a regular old beer to us. Besides...in Mexico, I'd rather drink Mexican beer anyway.

I have seen people with coolers around the pool. I think the only restriction from a resort perspective is absolutely no glass, which is just plain common sense anyway.

Actually...I think the glass rule has been relaxed.
We get glass bottles of Sol and Tecate delivered to us in the pool

Do they have glass bottles at the premier bar? I am going on a referral in May, and I was kind of looking forward to that.

I saw them pour beer into a cup for people. I'm going to hold back a whole lot of beer snobbish judgement on this thread, but you should drink beer out of a glass over drinking it out the bottle/can if possible. This subject has been beaten to death on beer forums, but here's one article if you want one.

Why You Should Drink Beer from a Glass

While I whole heartedly agree with the article when enjoying a craft brew, that assertion holds far less water when discussing Dos Equis, Sol and especially Tecate. Leave it in the bottle.
