How much would be a recommended amount to bring to Cancun for one week .
Also how much should I budget for tipping in Pesos for the following things
    · Restaurants
    · Cab rides
    · Buying drinks at the bar
    · Maids/room service ect

I'll let others answer re tipping for drinks, maids and restaurants. But one thing to remember there's no need to tip taxi drivers.

Taxis dont run on meters here, you agree a price before you get in. Taxi drivers will always bump the price to include a good tip for themselves, and it has to be said, 9 times out of 10 they overcharge tourists in the first place.

We tipped $2US for breakfast and most buffet lunches and $5 for sit down lunch. $5-10 for dinner.

We tipped about $5 a night for housekeeper who included 2-4 bottles of water when we did.

Bar was usually $5 to start and 1-2 after unless we were getting alot of shots- which was often- and we did another $5.

Does this mean we shouldn't even bother getting dollars exchanged into pesos?? What's the preferred currency, or does it not matter?

I never change my money over to pesos for tipping, its been my theory for a while now, that the bartenders and workers seem to prefer the american dollar, but then again, lately the american dollar isnt worth much haha. But I wouldnt go out of your way to exchange your money for that reason. Exchanging does make it easier in some places for shopping etc, so you dont have to try to figure out the exchange rate all the time.
