In the following order I would say, Peso's, USD then Canadian dollar. You can get almost anything with USD but lose a little bit if you think about exchange rates and the Canadian dollar you'll get gouged on for exchange.

Your ATM cards should work fine down in Cancun, just verify with your bank before you go or order some pesos at the bank before you leave.

I never do much outside the resort so USD always seems best for me. If you plan to do alot of shopping then pesos might be worth the trouble.

We usually take a few hundred in US, but found we use the ATM all the time.. its kinda funny when you get your stub from the ATM they calculate your balance by pecos... you feel like a millionaire... LOL
We've never had a problem with the ATM on the resort.

Pesos.........after talking to an number of locals from the resorts and off, they all prefer pesos. It's there money and they say they don't have the time to stand in a line at the banks to have it exchanged. They will take the US and CDN but their first choice would be their currency......understandable.
It's so easy for us to go to our banks and pre-order pesos. I just did it on line, it was very simple. I will have the pesos when I arrive and not have to worry about finding a bank or exchange booth, I'll be set.
Cheers and have a great time.

Dare I ask what is the reasonable amount of pesos to bring? We only plan on venturing outside the resort when the group goes out to the different bars at night. I was thinking in terms of tipping/buying beers etc..

Bring USD if you are planning to go with the hotel as they price the club trips in USD primarily. For each night at the bar budget $50 for the bus/wristband. Other than that Pesos work well. Shooters are about $35 or $40 pesos if I remember from the girls. Prices are similar to what you would pay in Canada or the USA for food etc, taxis about $10-$15 (USD) if you don't haggle for rides back at the end of the night. If you have a few shooters etc. at the bars at night I would budget about $75-$100 (again dollars) per bar night per person.
