Go to the same one find out his name tell him yours when you tip him the when you go back you can always address him by his name
You will be AMAZED at how good the bartenders are at remembering your face. As one of the posters said above, there could be a line 5 people deep (I have experienced much bigger lines than this surrounding the bar, and the bartender taking care of me). However, if it is more than one person in the group, it makes sense to have the most memorable/recognizable one (whether (s)he is the tallest, wearing something that stands out, etc) to be the one to provide the tip at the beginning... Like Nuno, I am also one to tip often and well in the US, and the service received versus those that don't is night and day...but I have found that the bartenders in Cancun raise this a notch higher, especially in light of the huge crowds that are out...
