Stick with the pvc pipe idea. cheap so buy it in cancun. Pre make 2 six inch buy 4 foot strips of 3/4 inch plywood. The ceiling strip comes down to cancun with the eye hook pre mounted. Wedge the pipes between the plywood strips floor and ceiling like holding a sheet of drywall up on the ceiling with 2 x 4's while you fasten it. Finally bring your roll of duct tape to wrap between the pipes to stop them from splaying. and voila!
Pretty good ideas! If 3/4 plywood is used I can make 1/4" deep mortises with forstener bits to exactly hold the pipes. Maybe get some rubber feet like on the bottom of a crutch. I would also substitute 550 cord for the duct tape. If I tie each leg together around the perimeter and also across like an "X" under the bed it can't go anywhere. Thoughts?

I was thinking exactly the same thing when I saw para cord.. *L* I think the closest thing to a good/safe idea you're going to get is the chinup bar in the hallway. or a chinup bar that attaches to a doorway and hang it in the bathroom doorway.... that should hold the combined weight of at least 2 people.
If you can bore precisely then doulbe up the plywood thickness with a bore through on the first of two pieces. as long as the pipe does not separate you should not be able to compress the pipes. With a couple of shims to anchor it tight to the roof the whole set up maybe ten minutes tops. At that speed you could go anywher on the resort you want!
